AAF’s Recipe of the Day

This one I love. Ok, I love them all, but this is special. It requires a small amount of preparation, and leftovers can be eaten the next day. Welcome to my Fisherman’s Salad.

Fisherman’s Salad (serves 6 to 8)

3 or 4 fist-sized fresh beetroot (canned ok but fresh is much, much better)

6 Free-range eggs, hard-boiled

12 Smoked Mackerel fillets, peppered.

2 pounds New Potatoes

Salt & pepper, chives,

Lemon wedges for garnish

Boil the eggs and quarter them. I usually steam the potatoes if they are small and new. Somehow they taste better. Another variant is halving them and bake in oven until cooked. Same for the beetroot, steam them but do not overdo it as it is nice to slightly undercooked. You need a large serving dish. Chop up the mackerel fillets roughly, add the potatoes, the eggs, the beetroot, and finally the chopped up chives and mix in the dressing.

Dressing: 2 soup spoons Dijon mustard, the juice of 1 lemon, a dash of a good red wine vinegar, 2 or 3 cloves of garlic finely minced, a cup of good olive oil. You know the drill: always start with the mustard, add the juice of the lemon, the vinegar, the garlic, keep whisking then add the oil slowly. Salt and pepper to taste. I use a mixture of coarse sea salt & kelp which goes really well with this dish. For garnish, apart from the lemon, if you could find dried seaweed, soak it, rinse and dry before you sprinkle it, liberally of course! Serve on a bed of curly endive or raddiccio, or any damn fine lettuce you can find! Anchovies on top: optional, but I stick them on regardless. Love them.

    I have no idea what beetroot is. Could I use tuna or another fish?

    Beetroot is a red bulb, very good for the blood. I’ll dig out a link in a minute. Sure you can use tuna or any other fish that you like.
