AAF’s Recipe of the Day
Written by Asinus Asinum Fricat on April 11, 2008 – 4:47 pm -This one I love. Ok, I love them all, but this is special. It requires a small amount of preparation, and leftovers can be eaten the next day. Welcome to my Fisherman’s Salad.
Fisherman’s Salad (serves 6 to
3 or 4 fist-sized fresh beetroot (canned ok but fresh is much, much better)
6 Free-range eggs, hard-boiled
12 Smoked Mackerel fillets, peppered.
2 pounds New Potatoes
Salt & pepper, chives,
Lemon wedges for garnish
Boil the eggs and quarter them. I usually steam the potatoes if they are small and new. Somehow they taste better. Another variant is halving them and bake in oven until cooked. Same for the beetroot, steam them but do not overdo it as it is nice to slightly undercooked. You need a large serving dish. Chop up the mackerel fillets roughly, add the potatoes, the eggs, the beetroot, and finally the chopped up chives and mix in the dressing.
Dressing: 2 soup spoons

I have no idea what beetroot is. Could I use tuna or another fish?
And here you go: http://vegbox-recipes.co.uk/ingredients/beetroot.php
Beetroot is a red bulb, very good for the blood. I’ll dig out a link in a minute. Sure you can use tuna or any other fish that you like.
Dang it. You’re taunting me now aren’t you AAF. Eggplant, beets, mussels. Blech. What’s next, head cheese?
omg, I love head cheese. omg!!
Don’t encourage him biscuit. First the head cheese then the haggis.
LOL! I’ll post something you like next. Any suggestions? I have tons of recipes….
How about something with spinach. I have a box of puff pastry in the freezer. What can you do with those? Also have fresh basil, dill.
Are you vegetarian? Can I do one with meat or fish?
Not a vegetarian. I also have some shrimp in the freezer I’d like to use up.
All right. will dig one out for you and post it in an hour or so.
Thanks AAF!!
