AAF’s Recipe of the Day

This can be made the easy way or the hard way as it is hard to get a good bowl of crab miso ramen outside Japan.
I would go the easy way. So let’s do it. To make enough for 6 to 8 persons (plus you can freeze stock anyway) you will need 2 liters of a good chicken stock (substitute it to a vegetable stock if you prefer), allow 1 soft shell crab per person, 1 large bok choy (Chinese greens), 1 green onion, finely chopped, 100 grams of smoked tofu, finely sliced, 50 grams of shittake mushrooms, sliced, a knob of fresh ginger, finely minced, 2 garlic cloves, also finely minced, a tbsp of toasted sesame oil, 100 grams of black miso paste, 6 tbsp of Tamari (Japanese soy sauce, a pinch of Cayenne pepper, a fresh chili, seeded and finely minced, a handful of roasted pork or a couple of shrimps (for topping), salt & pepper to taste, and of course 250 grams of dried ramen noodles, of a good quality.
First you cook the crabs by plunging them into a saucepan full of boiling salted water. Remove, quarter them, drain and set aside ( I could give the longer version by utilizing the crab water, if you so wish). In a large skillet, pour a little sesame oil, and add the garlic and ginger, toss it about for 10 seconds and add the black miso paste, then the chicken or vegetable stock, then Tamari & Cayenne pepper, keep stirring, cook (simmer) for 20 minutes, then add the noodles, stir, then add the crab pieces, the chili, the sliced mushroom, and finally the chopped bok choy. Simmer for another 5 minutes and serve into largish bowls. Top it up with the sliced pork (some might prefer sliced duck) the sliced or cubed smoked tofu and a pinch of green onions in each. Et voila! You can cook a bowl of Japanese ramen.

Miso paste? That’s the secret? I’ve been agonizing because I couldn’t do it with seaweed and there’s a shortcut?

secrets are usually quite simplistic. You can add some kombu seaweed as well to this.
BTW everyone, I didn’t mean to post the recipe this early, I pressed the wrong button…still, it’s all good!
Oh, I’m glad you did. I just started low carbing, and this might just be enough to knock me right off the diet (which I’ve been extremely successful at for a full 10 hours).
10 hours? I can’t go without bread for 2 hours, I’m doomed.
Any clues on what constitutes “dried ramen noodles of good quality” and where I might look for them? And how I can tell they’re good quality?
The price. And whether it has msg in it. Some manufacturers put msg directly into the noodles, and some include it in little packets. Throw that away.

Find a good Asian Grocery hopefully Vietnamese, they will have some. Don’t be afraid to ask. And after you go there and eat there and are friendly to the people running the grocery, they will treat you like a friend and help you find the best they have. I know.
