Tomato Chili Relish and Other Condiments

I love spicy food, can never get enough of it. I make my own chili sauce, and other condiments such as tomato chili relish, spicy onion marmalade, mango & papaya chutney, and just yesterday I tried my hand at a curried eggplant relish.

Salsa is another plus, and an endless source of combinations: green tomato, cucumber & mango; papaya, red onion & avocado; black-eyed beans, corn & sun-dried tomato; peach, avocado & tomatillos…the list, as I said, can be endless.

 

Here’s a quick way to use all your extra tomatoes: make lots of relish!

 

You will need 3 bell peppers, chopped,  6 red onions, finely chopped, 1 pint red wine vinegar,  100 grams brown sugar, 2 tbsp salt, 2 tbsp black pepper, 1 ounce of Cayenne pepper, 1/2 package pickling spice, 3 Hot pepper pods (optional), 1/4 tsp garlic powder (as opposed to fresh, this better for preserving) and lots of  peeled tomatoes, say 6 to 8 pounds. You may want to blanch the tomatoes to make it easier to peel the skins off.

Combine all ingredients in a large heavy pot similar to a Magnalite roaster or canning pot. Cook over medium heat, stirring occasionally, until mixture is thick and similar to catsup in consistency. Process and can in jars. Simple, and to the point.

      I KNEW I shouldn’t click on this diary! Oh my, this sounds so great. One salsa I have made is with fresh in season apricots, jalapenos, red onion or shallots, garlic, cumin, salt/pepper and a little oil.
