Lentil and Rhubarb Curry

I really like this recipe. I found it after the wonderful rhubarb crop came in at the Farmer’s Market when nothing else came in yet. Late spring, late summer. I like that it is easy to make and gets better in the fridge. ENJOY!
Ingredients:
1 cup dry “orange” lentils
1 very large sweet potato, peeled and sliced
1 Tablespoon oil
1 cup rhubarb, diced
2 Tablespoons palm sugar, melted
1 Tablespoon curry powder or red curry paste
1 teaspoon ginger root, grated
1/2-1 teaspoon hot red chili powder
1/4 C chopped cilantro or basil
Salt and pepper to taste
1/4 cup shredded coconut(optional)
chutney
rice either jasmine or basmati or brown
Wash lentils thoroughly and drain. Cover lentils with water in a deep pot. Bring to a boil, reduce heat and add raw sweet potato slices. Simmer until soft (about an hour). Remove from heat, drain, and set aside. Preheat oven to 400 degrees. Heat oil in a skillet. Once hot, add rhubarb. Reduce heat and cook until tender. Stir in sweetener, herbs, and seasonings. Mix with drained cooked lentils, and potatoes that have been mashed together with a fork. Pour into a oven-proof dish and bake at 400 degrees until piping hot (about 20 minutes). Garnish with coconut if wanted. Serve with a nice mango chutney and a big bowl of rice.

oo oo oo oo, I am so, so glad to know someone else mixes sweet potatoes and lentils Now, I’ve never done it as a curry, but that’s a fabulous idea.
I can’t wait to try this.
Have you ever had sweet potatoes with peanut sauce? Even better: sweet potatoes smothered in grilled sweet onion and green chile smothered in peanut sauce? It might be right up your alley.

Wow, that sounds really good!!!! I love sweet potatoes. Don’t like too much sweet marshmellowy stuff with them, but the sweet savory thing is delicious. Have made an African soup with sweet potatoes and peanuts and peanut butter with chicken broth.
That sweet potatoes/grilled sweet onion/green chile/peanut sauce sounds like it is to die for….wow. Have to make that soon.
Last night we made buffalo burgers, didn’t have any white potatoes for oven fries and used the red potatoes we had. They were excellent. Add in the organic ketchup and sea salt and fresh ground black pepper. Amazing.
Sweet potato oven fries, for me, fall apart too easily. Too, bad. A bar near here makes them and they are great. Haven’t figured it out yet.
You need to give me the recipe for the African soup. Seriously.
I’ve been trying to remember a soup I had years ago. It was made by a friend who was Portuguese and Japanese, and I can’t remember which the soup was. But it was made with rice and peanuts. It was so, so good! I’d love to made a batch of my own.
OK, it may take me a day or so, I need to go thru books and pages and pages of recipes. I think I got it from a show years ago that had a 100 YO African woman on it and gave the recipe.
