Today was a little less crazy only because I had extensive lists written out and started tackling things before sunrise. I may give myself the evening off and do something frivolous, like write about the barley mushroom pseudo-risotto I made for lunch.
I think I’ve found the start of a recpe for the fabulous dish I had years ago - it was like a rice and peanut porridge, made by a friend who was Portuguese AND Japanese.
I’ve been meaning to try and figure it out for the longest time, but Scotia’s recipe last night set me hunting.
And looks like it was a congee, which I think I figured out years ago, but forgot. And I think I’ve found some conquerable recipes.
I’m going to get to work on it and see if I can recreate it.
We’re on that same wavelength again. I’ve been rereading Maria Robbins’ The One-Dish Vegetarian: 100 Recipes for Quick and Easy Vegetarian Meals. She spends most of a chapter on rice dishes including a number of congee variations. Some of them sounded very good, and others sounded suitable for days when I am feeling experimental.
It’s an excellent book and there are a number of things in it that I’ve flagged to try.
Oh, thanks for that. I’ve been reading congee recipes online in between writing syllabi and course schedules (argh! my eyes! my eyes!), and I’m getting closer. But I’d love to have something *solid* in front of me.
2 T peanut oil
1 T butter
1 C onion
2 T tomato paste
Saute 1st 3 and add 4th, stir
Add:
1 C strained stewed tomatoes
2/3 C peanut butter
4 C stock, either vegetable or chicken
Simmer and add cayenne pepper to taste.
You can caramelize the onions beforehand, add some grated ginger, minced chilies, chopped sweet potatoes and/or carrots. Toppers include scallions, roasted chopped peanuts and rooster chili garlic sauce. Whatever you want. It’s all good!
Know what? I usually keep a big batch of peanuts in the shell for our squirrels, so, I roast a bit and shell and have some to smush and have in recipes and, after all, getting a little fresh ground pb at the grocery is a treat! I love the way it smells (AND tastes).
This old woman was a treat! She seemed like a feisty and strong woman. Loved her recipe!
I keep peanuts at the office - huge sacks of unsalted peanuts in the shell. But I never keep them at home because I love them so much, I end up living on them — kind of the way some people live on Twinkies.
I usually buy just enough for a recipe.
I have the same problem with peanut butter.
All that said, I used to make my own peanut butter, but it’s been a while.
My squirrels get squat. They’re living off what the cardinals and wrens drop. And they would die if they knew what was being talked about in my office today (a student was explaining to me how her granny prepared squirrel when she was growing up — watch out, squirrels! If prices get any higher, you’re dinner!!) (just kidding) (kind of)
Went on the back porch late this evening and a squirrel was squatting in the yard, she started yelling at me, and then I realized that she was peeing. It was so cute! Then she dashed off without a peanut!
There is not much that is made with peanuts that I don’t like! I survived on peanut butter during my radiation and following my surgery - calorie packed, and high in protein, not to mention easy to eat.
One variant of peanuts I haven’t been able to to like is boiled peanuts that some folks from the south seem to be addicted to.

Found the Peanut Soup:
2 T peanut oil

Nice! And I just happen to have all the ingredients, except peanut butter and butter.
