I’m making my quarterly corned beef for dinner. Tonight I’ve put it in foil in a 450 over for 15 minutes then will turn it down to 350 for however long it takes. I think this will work. BTW, it’s a 1.5 lb organic brisket that is corned that we got 3 of after St. Patty’s Day for half price! Just enough for us to have quarterly.
I’m frying potatoes, garlic and onion in olive oil and roasting some fresh green beans in the oven tossed in olive oil, sea salt and freshly cracked black pepper.
Oh, I’m sitting here drinking a lovely homemade MOJITO! My sweetie makes the best. And the limes I put up last week. they are in my Mojito tonight. We don’t use any sugar or that icky lime concentrate. Just the good stuff.
