My good friend Mango has incouraged me to check this site out. I was told that you might like to try my Fudge Truffle Cheesecake recipe. It is easy and very rich.
Fudge Truffle Cheesecake
2 cups semi sweet choc chips
3 8oz packages cream cheese, softened
1 14oz can sweetened condensed milk
4 eggs
2 tsp vanilla
Prepare crust
preheat oven to 300
Melt chips, stirring constantly. In a large mixing bowl, beat cheese until fluffy. Add milk until smooth. Add choc and remaining ingredients. Mix well. Pour into prepaired crust. I wrap my spring form pan with foil and place to pan in another larger pan filled with water. Bake in water bath for 1 hour or until almost set. Turn off oven and allow to remain in oven for 30 minutes.
Chocolate Crumb Crust
In a med. bowl, combine 1 1/2 cups vanilla wafer crumbs (or cookie of choice) 1/2 cup powdered sugar, 1/2 cup cocoa and 1/2 cup melted butter. Press firmly into a 9 inch spring form pan.
