Apples are put up now
Written by Translator on August 16, 2008 – 8:25 pm -It took hours to cut off the bad bits of the knotty apples that Preacher and Helen brought me, but I am done with them now. I got six pints of apple butter and nine half pints of pretty, clear jelly. I just took up the jelly, and it is cooling.
Here is a picture of the butter. I used about half the pulp’s volume in sugar, and added quite a bit of cinnamon and some allspice:

Here is a picture of the jelly. I used 3/4 cup of sugar per cup of juice, per most recipes. I did cheat and add one drop of red food coloring to the entire batch, not to each of the jars:

Next trip to Arkansas I will take most of this, since I eat sweets only rarely. Not from any medical condition, I just like them upon occasion. I hope that this brings pleasure to the readers. Warmest regards, Doc.

Thank you! I used a baby diaper as a jelly bag (no worry, no baby ever in it, I bought a dozen to use as sweatbands and kitchen towels), and it worked well. I tied up the pulp over a catch pan and let it drip all night.
Today I took the pulp and ran in through a colander, and cooked and seasoned it, and took the juice and gelled it. Not a bad evening’s work, and I even was able to have some dinner. The Vitamin C really works! Warmest regards, Doc.
