A really neat tomato paste

Well, I found a great way to make my own tomato paste and save it for future use. I just took a 28oz can of plum tomatos with juice and put it in a sauce pan over very low heat and smushed the tomatoes with a potato masher and cooked low until it looked like tomato paste.

(The Trader Joe’s Plum tomatoes unsalted is fresh and wonderful) Most canned whole tomatoes are canned in the field after all)
After cooking you can put a tablespoon in an ice tray, freeze and place in a freezer bag for later use. It is really great to have when you need just a tablespoon to pull one out of your freezer instead of cracking open a can.

        No, it was different. This was a huge (nearly ten gallon) stainless steel vessel. I did not note the plug in the very centre of the bottom that was soldered into the vessel. Either I let it get too hot, or the acid in the tomatoes, or both got to it, but it was a royal mess to clean up four gallons of tomato sauce (just ready to can, by the way) out of the stove.

        Perhaps it was for the best, as I suspect that the sauce would have had more lead in it that would have been healthy, although Vitamin C scavenges it from your system. Next time I will tell you about my lead poisoning. Warmest regards, Doc.
