I was just dying at work today – students straight through, not a moment’s break – and I got to leave early.
So I came home and fixed myself the perfect low blood sugar afternoon snack: a flaxseed waffle drizzled with the juice of a perfectly ripe Porter peach, which was then cut into pieces. Then a mountain of Greek yogurt.
Your waffle and peach and cheese sounds wonderful. Do you make your own Greek yogurt?
There is nothing like cheese and sweet and fruit! I had a toasted piece of sunflower bread with sharp cheddar melted and a sliced local gala. This time of year you can just go round the city and pick up ripe apples off the street. There is such abundance here.
Historians will tell you that the native americans here didn’t have to grow crops, fishing and the local “wild things” were enough to eat well.
Now I see remnants of apple orchards full of ripe apples by the side of the road waiting to be picked up. Yum!

I love the idea of fresh peaches on waffles..and savory cheese and fruit? Ahh – heaven!
In 2001, Nephew #1 married a delightful young woman up in Eastern Oregon, and I went to the wedding. My brother, who lives in Beaverton (your neighbor, Scotia?) had bought a huge tub of real-life feta, still in its brine, all 35-40 pounds of it, and we took it to where the wedding was to be held, in a little town outside of Union. We ate that cheese with literally everything! Berries picked from the side of the road with feta, German chocolate cake with feta, eggs with feta, granola with feta, feta with feta..
We went through that 40-pound block of feta in three days or so, and it has spoiled me on just about any other kind of feta cheese I have ever tried.
I don’t know if it was the special magic of the high desert of eastern Oregon, or the extra-special fresh feta my brother bought..I guess I’ll have to go to Greece and find out if it as good there as that big block of feta I ate at #1 Nephew’s wedding.
The left coast goats make the best left leaning feta EVAH! Oh, my. I think I have a lovely lady goat that is coming to live with us and the birds and the squirrels and the rabbits. She is a brown and white pygmy that will still produce some milk for cheese and yogurt.
I envy your treck across OR with 40 lbs of feta you could dip into at will!!!

I didn’t make this batch – I got this from a little store here – but I’ve made it before. Yum!
Myown favorite is goat cheese and something sweet. omg!

Feta with everything is good – even feta with nothing else is good!
