I can’t remember where I got this bell pepper salad from, but it is delicious and easy to make. A few hours in the fridge helps the flavors to meld. OMG! The lemon cucumber salad is wonderful! Ever had a lemon cucumber? They are really refreshing and, well, lemoney!
Red & Yellow Pepper Salad
1/2 red & 1/2 yellow bell pepper seeded & diced
1 shallot diced
1 small garlic clove minced
1/2 inch fresh ginger minced
1/2 thai green pepper, seeded and diced
1/4 cup thai basil chiffoniered, more whole leaves for garnish
1 lemon juiced + 1 T lemon zest
olive oil
sea salt
fresh ground black pepper
Add lemon juice and 1/2 amount of olive oil together and whisk until combined. Combine peppers, shallot, garlic, ginger, pepper, and basil. Toss with dressing, salt and pepper to taste. Add lemon zest. Refrigerate until ready to eat. Toss again.
Garnish with whole basil leaves.
Lemon Cucumber Salad
3 lemon cucumbers
2 salad cucumbers
1/2 a medium red onion
good olive oil
organic apple cider vinegar
sea salt
freshly ground black pepper
herbs like basil, cilantro, rosemary, mint if wanted
slice cukes, chop onion, chiffonier herbs add oil and vinegar, salt and pepper to taste. Let marinate for a few hours in the fridge, shaking the container occasionally.

I am tired. We drove all day through some REALLY spectacular scenery and only managed to make about 160 miles. But I have dozens of new ghost town pictures! And a chipmunk!

One of my favorite and very very easy salads used to be (I say, used to be because I haven’t made it in a couple of years):
A couple thinly sliced red bells
A thinly sliced red onion
Lots of basil leaves
Olive oil
Balsamic
Combine all ingredients and let sit for a few hours. End result: yums.
