I just restarted my Netflix membership, in anticipation of winter, and am excitedly pulling out my tiny crockpot because the season for steelcut oatmeal and corncakes is upon us.
The oatmeal is a snap.
The corcakes, however … omg, I’m trying to remember how I used to make them, although I know I always used buttermilk and whole corn and some cornmeal and some kind of sweetener and leavening and basically the entire point was to basically make something that was nearly entirely corn held together (just barely) by the cake-y part, then smothered in raspberries (I had raspberry bushes at the time).
So it’s going to take some remembering and experimenting but the time has come.
But (omg thank you Scotia) I am profoundly tempted by Laylita’s humitas omg which sound like a little bit of heaven in a husk.
As for dinner, I will probably go out for menudo at the new place. I love my menudo!!
I made beans and chicos today! Very, very simple, but oh so good. I had it for lunch at Acoma Pueblo, and then a couple of days later we went to the Santa Fe Farmer’s Market and what should I spy but two farmers selling chicos!
I bought a lot. Eight pounds, I think. I’ll be swimming in beans and chicos for a while.
Chicos are an elegant way of preserving late-season corn. TO make them, you cut the immature ears off the stalk right before frost. Roast them in the husks. Peel back the husks, hang the ears to dry, and then rub off the dried kernels for storage.
To cook, soak and boil like you would dried pinto beans. They add a smoky, roasted flavor that is pretty much indescribable except…

Dinner tonight is frozen sweet corn tamales made with green Hatch chilis, covered with a delicious Crema Salvadoreña. My friend Mary bought these tasties for me at the Fiesta Supermarket, and a tamale is steaming on the stove as I type!
Even though I’m home, I just did not have sufficient oomph in me to get up and go to the grocery store…thank the stars for good friends!
dchelo, I am so glad you’re having tamales. You need to build your strength up, and nothing will do that quicker than tamales - esp. with Hatch chiles.
The reason that I asked is that sometimes embeds work fine for me, but are different for others. The faux pas with the mass spectra pictures is a good example. Tomorrow Pique the Geek will talk about chirality on a molecular level, with a home project.
And all you need are a couple of packing peanuts or other foam, a few toothpicks, and something to color the toothpicks, like markers, paint, or even food coloring.

I will be around as long as the electricity holds out. Wish me and my chickens luck.
Yes, I am one hour west of Manzanillo and four hours southwest of Puerto Vallarta. Right next door to the tiny state of Colima. Kind of scared now. I live in San Patricio Melaque. Just a little beach town

Hi drchelo, it is the rain that worries us since our flood last year. We do not know if the canal above town was repaired properly. If the water breaks through again, we will have another disaster.
