Turkey Hash
Thanksgiving is over.  The Turkey has been cut off of the bone, and the bones and leftover skin roasted and turned into stock.  You have made a couple of varieties of Turkey soup.  The Turkey, dressing, and giblet gravy are almost gone, but there is a little more left that will go bad if not used soon.  What to do?  Make Turkey Hash.  It uses up all of the leftovers and is it ever good!

So, how do you make Turkey Hash?  There are as many recipes as there are people who cook Turkey.  Here is the one I like:

Turkey Hash
1½ C Turkey, cut into 1 in cubes
Leftover Giblet Gravy + Turkey Stock to make 2½ – 3 C
1 C Leftover Dressing (you may have to hide some)
One med. large potato, cut into ½ in cubes
½ med. large yellow onion, chopped
Salt and Black Pepper to taste
Canola oil

Preheat oven to 350o. Over medium heat in a cast iron skillet with a lid or dutch oven (if you do not have cast iron, use an oven proof stainless steel skillet with a lid), sauté onion in Canola oil until it starts to become translucent. Add potato and continue until the potato just begins to soften. Add Turkey, dressing, and stock, stirring until the mixture begins to bubble.  Adjust seasoning. Cover and bake for 45 minutes. Remove cover and continue baking for about 15 more minutes to form a crust on top, but do not allow to become too thick. Add a little stock if the mixture becomes too dry; gravy should be thick, not solid. Serve with buttermilk biscuits or corn bread, or spoon over toast. Wow!

      Thanks, biscuit! I used to watch my grandmother make hash, and it stuck. Turkey hash is my favorite.
