I got some lovely red kale, scallions and mushrooms at the first weekend of the farmer’s market this year. Not much has come in as it is still cold here. (Parsnips, potatoes and leeks! Eat in season!) We had some oyster shooters at Evan’s stand and decide on steamer clams (Manillas) for dinner with some lemon butter and this lovely salad. It was really good seeing all our organic friends at the market. Every one of them is special, the egg lady, the moss lady, apple lads, pepper people, the herb grower, bean and flower mam, the chocolateer and all the rest! I really admire and like everyone. That’s why I go week after week.

Red Kale Salad

3 C red kale stemmed and washed (since the kale was really fresh, I just took off the lower stems)
1 C washed & sliced mushrooms
1/4 C washed & sliced scallions
1/2 C thinly slivered red onion
1/4 C plumped raisins (let sit in hot water for 15-30 minutes and drain)
1/4 C fresh thyme leaves

Make sure all is dry and toss. Add some dressing and toss again. Serve with more dressing on the side.

Orange, Dijon & Thyme Vinaigrette Dressing

1/2 C olive oil (or milder oil if you want)
3 T fresh squeezed orange juice
1/2 tsp orange zest
1- 1 1/2 T balsamic vinegar
1 T honey
1 – 2 T dijon mustard
1/2 – 1 tsp sea salt
1/2 – 1 tsp freshly ground black pepper
1 1/2 tsp fresh thyme leaves

Incorporate (ok, this means whisk-it’s a good term!) oil, oj and vinegar, add other ingredients and whisk again! Let sit for 15-30 minutes and taste. Adjust to your liking.

      Well, Evan had some different oysters on the half shell on ice with hot sauce or red sauce or lemon juice on the side. $1 for the big ones and $3/4 for the little, sweet ones. He had kumotos which are small and sweet and a transplant from Japan grown in the South Sound, Pacific which are big and juicy and the medium sized Olympic which we shot in our mouths! Yum!

          Well, until we moved here, me either. Seems like the fresh ones are just delicious. These came out of the Sound yesterday! ;-)
          Just look at the picking of oysters last fall. We ate them that afternoon. Man, were they good. That’s it, you need to eat everything FRESH! That is the key…..

      The salad fixin’s look dee-lish as usual, Scotia, and your description of the crustaceans made my mouth water.
      But what is also intriguing about your story is the cast of characters at the farmer’s markets. Pray tell me, dear – what sort of moss does the moss lady sell, and is it an edible or a decoration? The “apple lads and the pepper people” sound positively poetic, Scotia. I want to meet them!

        You got it! I will do a diary next weekend on all our favorite friends at the market! With pictures and stories. They are all fascinating. Yes, apple lad #1 spent the winter in Hawaii (with a “friend”). I’ll find out more…..later……;-)
