Green Tea and Soy Sauce Ice Cream
(Servings: 4)- 3 egg yolks
- 125g (4 1/2 oz.) granulated sugar
- 2 t Kikkoman Soy Sauce
- 200 cc milk
- 100 cc heavy cream
- 2 t (10g) granulated sugar for whipping heavy cream
- 1 C strongly brewed green tea (1 1/2 T green tea leaves, with 250 cc boiled, not boiling, hot water)- Mix egg yolks with sugar and soy sauce.
- Add milk to the egg mixture and strain. Cook over very low heat, stirring constantly with a wooden spatula until the mixture starts steaming and thickens slightly.
- Remove from heat and put pan in cold water; mix in cold green tea.
- Process mixture in an ice cream maker until partially frozen. Add heavy cream that has been whipped with sugar until soft peaks form. Continue processing until the mixture hardens.
- Serve with nuts or crunched nuts praline.

Ugh. The whole green tea thing baffles me. Yea, I know, it’s trendy trendy trendy, just the latest thing, but I’ll take a well made glass of conventional iced tea any day over it or, if all else fails, iced black raspberry (omg!).
In winter: Earl Grey or Lapsong Souchong with lots of sugar and cream. omg!
Although I did use a green tea shampoo one time that was wonderful. It didn’t work particularly well, but it smelled great.
Green tea is supposed to be full of antioxidants – that whole “food as medicine” thing. Come to think of it, soy is in the same category, which would make this an attempt at guiltless junk food, I guess.

If I’m going to eat ice cream, it’s going to be Ben & Jerry’s Creme Brulee. Sin mightily if you are going to sin.
And what *is* the deal with all the soy love? I can’t eat it. It stops me right up, besides which half my family is allergic to it. But everyone is all, like, omg, you *have* to eat soy!!! omg, no, you don’t!
Besides, real ice cream is so easy to make and so much tastier.
When Scotia and I drove cross country, we stopped at Taliesin West in Scottsdale Arizona. After looking around and drinking in the beauty, we were really hungry. We found the Osha Thai restaurant nearby. The food was excellent, and sure enough, they had Green Tea ice cream (without the Soy Sauce
). It was excellent. Haven’t found another as good anywhere else, though.
The green tea used in the ice cream we had or used in cakes, cookies or cooking (not tea to drink) is a very special tea plant and the leaves are prepared just so and finely ground and the flavor is very concentrated. I like the taste in food, especially ice cream, but not the green tea to drink. It gives me heartburn, so go figure.

I know it’s popular, but I guess I’m just burnt out on the idea of it. Besides, it’s summertime (and boy, is it) and I’ve been drowning myself in good iced tea and watermelon.
