These Hood Canal prawns are the strangest things. They are intensely red, really prickly and bigger than any I have ever seen. It hurts to shell them. They are ancient to this fjord in the Sound. Sweet and tasty, they are only available a few times a year. We were fortunate to have them from our local fishmonger last weekend.

If you are in need of a shrimp boil and don’t have one, here is what I currently use from my herb/spice rack.
Bay Leaf
Slightly cracked black peppercorns-don’t crack them very much and use about 10 peppercorns
1/2 to 1 tsp sea salt
up to 1/2 tsp crushed red pepper
cayenne pepper to taste
3-4 cloves slightly crushed
1/4-1/2 tsp ginger powder
1/2 tsp garlic powder
1/2 tsp thyme
1/2 tsp oregano
1/4 tsp turmeric or saffron
Place all in a 6-8 cup saucepan and boil in water, add the washed shrimp and cook until pink and curled. Peel down to their little tails. Now you have a shrimp cocktail to eat with a sauce or put some shrimp in a stir fry or already cooked rice with some eggs or greens or ??? for breakfast or a lunch.
Or just do what I did many years ago. Mix 1/2 dijon mustard with 1/2 no sugar mayonnaise and some REALLY good horseradish as a sauce. Give the kitties only the shrimp (NOTE: I boiled these shrimp in just water, kitties don’t like the herby/spicey stuff) and give yourself the shrimp with the dip! They like it, you like it and it’s good for you both!

Last Friday, Sweetie and I had these as you see on ice with lemon slices, cilantro and a sauce of organic ketchup and wasabi paste. Was it hot and good? Yep! Did we toast drchelo again? Yep!
