We’ve been on a lean and mean diet over the past few weeks, and it is paying off! We are feeling better and dropping a bit of weight. I have been making alot of salads out of our garden, but this one takes some cabbage which we do not have growing. I got the cabbage and the “BEST” celery I have ever tasted at my local organic farmer’s market. It is an Atkins recipe with a little change from me-of course!

Irish Pub Salad

The dressing (make well in advance and the flavors will meld!):
2/3 C mayonnaise (I use a lovely unsweetened mayonnaise from Trader Joe’s)
1/4 C heavy cream
1/4 C water
1 1/2 tsp chopped fresh rosemary
1 tsp chopped fresh tarragon
1/4-1/2 tsp sea salt
1/4-1/2 tsp freshly ground black pepper
Mix together, cover and chill until needed. Adjust salt\pepper before serving, if you wish. I usually have the salt\pepper on the table to add.

Salad:
4 C cabbage, shredded (I used a mix of red and green)
4 C lettuce torn in bite size pieces (I used some arugla, red romaine and green ice I have growing)
4 C of cauliflower florets, celery, mushrooms, cucumber, zucchini and yellow squash, chopped (I proudly used my homegrown zucchini, pattypan squash and seedless cucumber!)
Toss together in a big bowl, cover and chill.

Toppings:
Grape tomatoes, halved and drained
Hard boiled eggs, chopped
Blue Cheese, crumbled (if you have a Costco near you, get the Pacific Blue cave aged package, it is a bargain and really good)

To plate: Put some salad on a plate and add the toppings and drizzle the dressing over all.

P. S. Friday our small town got a Trader Joe’s! Before we had to drive 45 minutes to TJ’s, NOW IT IS 5 MINUTES AWAY!!!!

    TJs received over 2,000 applications for 68 part time positions. It has been mobbed since it opened. I have never seen that at any other grocery.

      Hi there. That is a great recipe and everything is available here.
      Sorry that I’ve been gone so long but I had to buy a new computer and had some other problems like moving to a new unfurnished house in another town.
      I am happy to say that I love it here and my house is just perfect! I have all the furniture except for my dream bedroom which I will do next month. I am happy to be back after the log in process. I have a new dog named Benito. He is a tiny chihuahua who can walk under Cora. They make a great team.

        Yes I am glad to be back. The little town that I moved to is 2 kilometers to the old town so I walk in on cool mornings. The new house is pretty nice and I have had such a good time furnishing it. I have been kind of sick for the past couple of weeks and yesterday had an ultrasound on my breasts. By the way, the whole thing cost me about forty USD. I had extensive bruising and pain. It has turned out to be a blood clot so am on some crazy meds for a month. Prednisone and a heavy pain pill.
        How are you? Where is everybody? I see bisquit is now drama queen. That is too funny. I hope all is well, and I’ll be checking in daily to see what is going on.

          Glad you are near the sea still. Sweetie and I are going 1 1/2 hours to the coast to walk on the beach tomorrow. Oh, and to an especially wonderful Irish restaurant..we have to get a reward for walking on the beach.
          I hope everything is OK with your breasts. That is a real problem. I have a problem and mine cost me $500USD. I think coming to Mexico and staying with Mango is a great option!
          biscuit is busy with students and classes and getting her house in order. Kate is busy with family and making money. This economy hasn’t been kind to small business.
          I am starting to post more often as is Greyfox. I hope you do too! What about your dessert friend? Do you have an oven now?
