
I had the most pleasant birthday at a fish camp up on Puget Sound. Lovely cabin, nice quilts, cozy, wonderful place for viewing wildlife…grey whales, Doll porpoises, seals, sea lions, otters, bald eagles, great horned owls!!! What a birthday!!!
I made all my favourites to take and eat and have a grand old time. Walking on the beach and just enjoying the calmness and quietness was a wonderful thing.


Here’s a lovely view from our cabin toward the boathouse and the Saratoga Passage where we saw all the critters. It was so wonderful!!! Let’s get to the food.
I make my chicken with all ingredients at room temperature. It just better that way. What I used this time was four thighs.
4 organic chicken thighs
1 C buttermilk
Put buttermilk in a container with a tight lid, add the thighs, put the lid on and shake. Keep in fridge and shake occasionally for 4 hours.
three pie pans….
one with flour, little sea salt and pepper,
one with one whisked egg, tabasco, garlic powder, sea salt, black pepper,
one with panko, little sea salt, black pepper, paprika
Skillet with peanut oil
Heat the skillet with the peanut oil medium high, dip the chicken in the flour, then the egg and then the panko and drop in the skillet. Brown on one side and turn down a bit and cook on the other side until browned and done. When done, place on a rack to drain. Yummy!

Hi Scotia, I’mtrying desperately to start posting again, but I am being positively hammered! I need this recipe – just bought some good chicken and I was going to cook it last night, but I am sooo tired of my usual approaches.

I am just glad that you can occasionally post! Wait for my brining edition! I just brined a chicken and we grilled it and it was most succulent! I’ll post “Brining 101″ for chicken, turkey, pork. Easy and wonderful. The chicken was the best, besides this buttermilk chicken. I love panko!

Let me tell you, this is the best fried chicken ever. The crust is crispy and tastes wonderful.
The meat is tender and juicy. It was really difficult to keep from making a huge pan of gravy, but I managed. Eating it at the “Fish Camp” really made it special. What a cool place to spend a couple of days. The water is crystal clear, and people swim there in the summer. I wouldn’t without a wetsuit, though. Can you imagine having a whale surface next to you to see what you are up to?
